Please join the Catering and Banquet Operations (FNH 241) students and instructor for a brunch buffet service in the Terrace View Cafe.
This event is an opportunity for students to apply the principles and techniques of the catering industry. This program explores the planning, preparation and service of themed events. Each event will include a student-driven menu, as well as their predetermined facility setting and decoration.
Southern/Soul Food Buffet Menu:
Collard Greens
A classic southern dish, cooked slowly with smoked ham hocks
Southern Mac & Cheese
Creamy baked macaroni with a 3-cheese blend
Shrimp & Grits
Another southern favorite! Buttery grits with sauteed shrimp
Country Fried Chicken
Crispy chicken breasts served with a creamy white sauce
Creole Daub
A disappearing Louisiana delicacy. Slow-cooked beef with root vegetables
Gumbo
Chicken and andouille sausage with peppers, onions, okra and celery
Cornbread
Dixie-style side dish, crumbly and golden brown
Bananas Foster
Traditional sauteed bananas with brown sugar and dark rum. Served with vanilla ice cream
